Gingerbread Spice Cake with Fluffy Cream Cheese Frosting

Ingredients
- 1 cup softened unsalted butter
- 1 cup brown sugar
- 3/4 cup molasses
- 2 eggs
- 2 tablespoons freshly grated ginger
- 2 teaspoons fresh lemon juice
- 2 1/4 cups all purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon sea salt
- 1/2 cup boiling water
- 1/2 teaspoon baking soda
- For the frosting:
- 8 ounces softened cream cheese
- 3/4 cup unsalted butter softened to room temperature
- 4 to 4 1/2 cups powdered sugar
- a few drops of vanilla extract
- 1-2 tablespoons milk optional, depending on texture
Instructions
- Preheat your oven to 350 degrees Fahrenheit and grease a rectangular baking pan with butter (I use a 9" by 13" pan).
- Using a stand mixer or hand mixer, beat the butter and brown sugar on high speed until light and fluffy.
