Ingredients
  • 1 cup softened unsalted butter
  • 1 cup brown sugar
  • 3/4 cup molasses
  • 2 eggs
  • 2 tablespoons freshly grated ginger
  • 2 teaspoons fresh lemon juice
  • 2 1/4 cups all purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon sea salt
  • 1/2 cup boiling water
  • 1/2 teaspoon baking soda
  • For the frosting:
  • 8 ounces softened cream cheese
  • 3/4 cup unsalted butter softened to room temperature
  • 4 to 4 1/2 cups powdered sugar
  • a few drops of vanilla extract
  • 1-2 tablespoons milk optional, depending on texture


Instructions
  1. Preheat your oven to 350 degrees Fahrenheit and grease a rectangular baking pan with butter (I use a 9" by 13" pan).
  2. Using a stand mixer or hand mixer, beat the butter and brown sugar on high speed until light and fluffy.
