Ingredients
BUTTERNUT SQUASH + GARBANZO BEANS
- 1 large butternut squash, peeled and chopped into bite-sized pieces (~4 cups)
- 2 tablespoons olive oil
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 15oz. can garbanzo beans, strained and rinsed
FARRO
- 1 cup farro, rinsed
- 2 cups broth or water
DRESSING
- 3 tablespoons olive oil
- 1/4 cup red onion, diced
- 3 garlic cloves, peeled and minced
- 1 teaspoon dijon mustard
- 1 teaspoon maple syrup
- 3 tablespoons balsamic vinegar
- 1 tablespoon fresh lemon juice
- 1/8 teaspoon salt
SALAD
- 4 cups chopped kale, deboned
- 2 teaspoons olive oil
- 1/8 teaspoon salt
- 1/2 cup dried cherries
- 1/4 cup red onion, diced
- 1/4 cup pepitas
- 1/2 cup goat cheese crumbles
